The most famous dish of Punjab is the Sarson ka saag, which originates from Punjab. This dish of green mustard is simmered and slow cooked over coals along with rajma, kali dal or lentils. This dish is served with unleavened bread of cornmeal or wheat and a dollop of butter or with steamed basmati rice.
Punjabi Non Vegetarian dishes are extremely popular. Butter Chicken is among the best known Indian foods all over the world. Its creamy gravy can be made as hot or mild as you like. Dishes like Tandoori Chicken, Chicken Tikka, Rogan Josh, Bhuna Gosht and Kadhai Gosht are some of the popular dishes.
Breads are the main food in the Indian meals. Chappatis and nans are cooked in an oven or tandoor. Thin and small chappatis are made on an iron griddle placed on a fire. Dry baked on the Tava like Phulka or Chapati, Jowar Ki Roti, Baajre Ki Roti and the very famous Makki ki roti smeared with white Butter.
These styles are distinctive from one another due to factors such as available resources, climate, geography, history, cooking techniques and lifestyle. One style may favour the use of lots of garlic and shallots over lots of chilli and spices, while another may favour preparing seafood over other meats.
